Hello all and WELCOME!
This blog is to showcase my attempts at cooking new and tasty dishes. I love food and I love cooking (minus the clean up at the end!) My husband and friends seem to think I'm pretty good at it, so I've decided to step up my game a bit and try some new things that I normally wouldn't.
I plan on showcasing all sorts of recipes, from breakfast to deserts. I also have a few ideas in mind for 'weekly specials' such as 'Taste Testing the World.' Once a week a girlfriend of mine and I get together, pick a country and find something traditional to that country to eat. Most of the time it works out great, but there are times when we find we have no need to eat in a particular country ever! (Swedish meat pies didn't exactly turn out. Super lacking in taste!) I'll be posting pictures and full recipes so that if you see something you like, you can try it out yourself. I'll also be doing a weekly vegetarian dish. Meat is good, but not always good for you. There are tons of awesome dishes out there that most would never think of that involve nothing but veggies, grains and/or fruits!
This is my second attempt at this blog. I'm hoping that this time around goes better. I'm by no means a chef or culinary genius, but I know what I like and I really like to try new things. I will be posting daily recipes. Some will be new and some old favorites. So today, for the inaugural post, I'm leaving you with probably my all time favorite recipe. It's super simple, super cheap and absolutely delicious! Enjoy!!
Taco Soup
Ingredients:
1 can Whole Kernel Corn
1 can Dark Red Kidney Beans
1/2 White Onion - diced
1 lb. Ground Beef
1 package Fajita Seasoning
1 can Fritos Jalapeno Cheese Dip (optional)
Mexican Style Shredded Cheese
Tortilla Chips (suggest Tostino's Scoops!)
Step 1:
Brown ground beef with 1/2 of the diced onions. I usually sprinkle a little garlic salt and pepper too, but that is completely up to the cook!
Step 2:
While meat is cooking, pour diced tomatoes, corn, beans (all undrained,) and the rest of the diced onions into a large pot. Mix in fajita seasoning and allow to simmer over low heat.
Step 3:
Once meat is finished cooking, add it to the simmering veggies and let simmer for about 10 minutes, still over low heat.
Step 4:
Turn off heat. If you like a little spice, add the whole can of Fritos Jalapeno Cheese dip and stir in thoroughly. Once mixed in you a ready to eat! Service with tortilla chips. If you use the scoops, you don't even need spoons!
